PAM sent me their Original and Baking cooking sprays along with a Le Creuset pie plate and asked me to share a recipe with my readers. I chose this easy, delicious vegetarian frittata. This recipe is really more of a method and you can add whatever veggies you like or even meat.

Okay, let’s get to making some tasty food. The recipe card is at the bottom of this post for easy printing.


  • 1 tablespoon butter
  • 1 medium potato
  • 1/2 red onion, finely chopped
  • 1 bell pepper, seeded and chopped
  • 8 eggs
  • 1/4 cup grated parmesan cheese
  • a few shakes of your favorite hot sauce (we like Cholula)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  • 2 tbsp fresh cilantro, chopped
  • 3/4 to 1 cup Monterey Jack cheese (optional)

Cooking Instructions:

Slice your potato very thin. This is going to line the bottom of your dish so you don’t want them to be too thick.

Spray your pie plate with Original PAM Cooking Spray

Vegetarian Brunch Frittata #recipe #PAMSmartTips #ad Line your pie plate with the thinly sliced potato. I used red since I had them on hand but you can use whatever potato you like.

Melt the butter in a pan then add the onion and bell pepper. Cook until the onions are translucent.

Beat the eggs and then add your spices and parmesan cheese. Stir to combine then add the onions and peppers. Stir to combine again.

Pour the egg mixture over the potatoes and cook in the oven at 350 for 30 minutes.

If you choose to add the Monterey Jack cheese, cook for 20 minutes then add the cheese on top and cook for the remaining ten minutes.

Admire your handiwork for ten minutes while your frittata cools and then slice and eat. Yum!

  1. 1 tablespoon butter
  2. 1 medium potato
  3. 1/2 red onion, finely chopped
  4. 1 bell pepper, seeded and chopped

  6. 1/4 cup grated parmesan cheese
  7. A few squirts of your favorite hot sauce (we like Cholula)
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon pepper
  10. 1/2 teaspoon oregano
  11. 2 tbsp fresh cilantro, chopped
  12. 3/4 to 1 cup Monterey Jack cheese (optional)
  1. Melt butter in frying pan over medium heat. Add onion and stir bell pepper and cook until onions are translucent. Remove from heat
  2. Slice potato very thin. Spray pie plate with Pam cooking spray and lay potato slices evenly over the bottom of the pie plate.
  3. In a large bowl whisk eggs stir in parmesan cheese, hot sauce, spices, and onion & pepper mixture. Pour into pie plate over potatoes.
  4. Bake in oven at 350 degrees for 20 minutes, sprinkle top with Monterey Jack cheese and put back in the oven for about 10 minutes or cheese is melted. Let cool for about 10 minutes before serving.

I had grand plans to make my son a school bus birthday cake since he is obsessed with school buses.     I’m assuming Pam is dairy-free? Now that we have food allergies to deal with I’m on the look-out for dairy-free options. I would use this for baking chicken and prepping pans.
