Red started his Sophomore year last week and that means stocking the refrigerator and freezer with easy to make snacks for him to have after school. I like to have easy to make snacks that encourage him to eat vegetables and since he won’t sit down and munch on carrot sticks I have to get creative.
We went to Walmart and chose Bagel Bites to make bagel sandwiches and Delimex taquitos to have with homemade pico de gallo and guacamole. Kids, you have to trick them sometimes.
Red has a pretty long day at school but the reward is one day a week that he gets out early. He really likes this schedule and I am a little jealous that we didn’t have this option when I was in school! But that means that there is one day a week that he doesn’t have lunch at school and is starving by the time he gets home. On those days one of his favorite snack recipes is to add some sliced Roma tomatoes and fresh baby spinach to a Bagel Bite for a fun and delicious mini sandwich.
The possibilities are endless with the toppings you could choose.
But for a typical after school snack where he just has the munchies, he heats up a couple Delimex chicken and cheese taquitos and dips them in homemade pico de gallo and guacamole that we have on hand fairly often. I have to admit that the adults in the house also enjoy this little snack!
Even though Red is fourteen and can cook some things by himself, the Bagel Bites and Delimex taquitos are perfect because he can simply put them in the microwave. They’re quick, delicious, and don’t require very many dishes, which he loves since dishes are his chore.
Even though Dub isn’t in school yet he also enjoys having an after school snack with his big bro.
