This year the first day of school is a huge one in our house. I have one son starting his last year of school, and another starting his first year. I can’t believe that my first baby will be a Senior in high school this year! Almost more shocking is that my last baby will be starting Kindergarten. Where does the time go?
Usually, we go out to dinner on the first day of school. We like to talk about how the day went and celebrate the start of a (hopefully) fantastic new year. But to kick off this bittersweet school year, I am also making my boys some back to school cookies for them to have when they get home.
These back to school cookies are really easy to make. Made with a simple basic roll out sugar cookie dough, you can make them while the kids are at school for a nice after school surprise. The great thing about this dough is that it doesn’t need to be refrigerated beforehand so you could even make them at the last minute.
I found this apple shaped cookie cutter at my local craft store along with some red and green frosting. You could certainly make frosting from scratch if you’d like or even use sprinkles. I chose not to since a recipe always makes so much. The possibilities are almost endless with these cookies.
To go along with my cookies, I created a First Day of Kindergarten sign for Dub to hold on his first day. It includes the date he started, his school name, his favorite book, and more. I created it easily in PicMonkey using their fonts and chalkboard background. These will be fun things to remember when he is the one entering his Senior year. I wish I would have done this with my oldest son.
He is so excited to start Kindergarten next week, he can hardly even stand it! I have missed this enthusiasm for school since it is long gone for Red. I know he will love his first day as much as his cookies.

Apple Sugar Back to School Cookies
- 1 cup unsalted butter softened
- 1 cup white sugar
- 1 egg
- 1 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 2 tsp baking soda
Cream together butter and sugar
Add egg and vanilla
In a separate bowl, combine flour and baking soda. Add to butter and sugar mixture slowly.
Roll out down on a floured surface and cut out your cookies
Bake in a 400 degree oven for 6-8 minutes
Do not overcook! Take them out of the oven when they look like they could use another minute or two and the edges are very lightly browned. They will continue to cook when removed from the oven.
