Here we are with the holidays in full swing. Shopping, baking, wrapping, and decorating. Who has time to cook three square meals a day? Not this girl. Between three birthdays, the holidays themselves, and work, I am always looking for ways to get some time back and one of those ways is by making easy make-ahead breakfasts and lunches. If I can put them in the freezer to be reheated in the morning, even better!
When the kids wake up on Christmas morning it will be on. Eat first? No way! Not happening. Then when everything is open, they have to check out their loot. No time for food until at least lunchtime. So this year I’ve come up with a way for them to eat while checking out their gifts. A handheld breakfast biscuit calzone to the rescue!
BREAKFAST BISCUIT CALZONES
This couldn’t be easier, folks. Plus, they taste so much better than a frozen store-bought breakfast sandwich. All you need for this portable breakfast is a can of biscuits, eggs, ham/sausage/bacon, a bell pepper, scallions (or green onions if you prefer that term), and cheese. I bet you have all or most of those things in your refrigerator already. Since I like to keep these in the freezer, this recipe is for a double batch.
Chop half of bell pepper, a scallion, and about a half cup of your meat of choice. In a separate bowl, combine five eggs with about 1/4 cup of milk. Cook the veggies and meat in a tablespoon or two of butter until the veggies are soft and the meat is browned. Beat the eggs and milk together and add the mixture on top of the veggies and meat in the pan. Spice it up with some salt, pepper, and a half teaspoon of Italian seasoning and top with a quarter cup of your favorite cheese; I used cheddar. Combine all of the ingredients until the eggs are cooked and set the mixture aside.
Now it’s time open your can of Immaculate Baking biscuits. Can I tell you how terrified I am of these biscuit cans? I make someone else open them for me because I hold them at arm’s length and close my eyes, which makes opening them a little difficult. I’ve always been afraid of the sudden pop. I also don’t particularly like balloons for similar reasons, but that’s a story for another day.
Anyway, open your biscuits and roll them out into a larger, flatter circle. Put some egg mixture over half of the biscuit, fold it over, and close the calzone by pinching the edges together with a fork.
Put the little biscuit calzones on a baking sheet covered with parchment paper or a silicone mat and bake according to the biscuit dough directions. In my oven, I cooked them for 17 minutes.
Look at that! How simple and don’t they look delicious?! They are the perfect size to hold in your hand while doing other things. Opening gifts, waiting at the bus stop, or sitting at your desk
surfing the internet working. I don’t know why I didn’t think of this sooner!
