Having a child who doesn’t like cow’s milk has forced us to become creative with milk alternatives. His favorite by far is almond milk. I feel good about the amount of protein in almond milk so I don’t feel like he is missing out on any nutrients by drinking it exclusively. We use it in our home a lot both plain and for making smoothies.

On a recent shopping trip to Safeway, I noticed that Silk now has new #SilkAlmondBlends including an Almond Coconut blend which inspired me to try an Almond Joy smoothie.

 I admit that the Almond Joy smoothie was a bit of an experiment that took a few tries. At first, I tried to use chocolate chips and it killed my trusty immersion blender that I usually use for smoothies. I have suspected that it was on its way out for a while now but the chocolate chips were the last straw. Oops! But on the bright side, I got to buy the new Ninja blender that I had been coveting but didn’t “need”. In the end, I opted for chocolate syrup instead.

Remember, this one is a treat smoothie, not a breakfast smoothie. (recipe card below) The end result was pretty simple: Almond Coconut Blend milk, chocolate syrup, coconut oil, Greek yogurt, vanilla, and ice.

I was also excited to see that they now have an almond milk with Protein + Fiber. This would be perfect for a morning bowl of cereal or Cinnamon Bun smoothie for that extra bit of energy in the morning. For this smoothie, I used Silk Protein + Fiber almond milk, oatmeal, a half of a banana, plain Greek yogurt, vanilla, cinnamon, and ice.

I love how versatile almond milk is and I especially love having alternatives for my non-cow-milk-drinking toddler.

Almond Joy & Cinnamon Bun Smoothies

Almond Joy & Cinnamon Bun Smoothies

Ingredients

Almond Joy

  • 1 cup Silk Almond Coconut Blend
  • 2 tbsp chocolate syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp coconut oil
  • 3 oz plain or vanilla Greek yogurt
  • 5-7 ice cubes, or more depending on your desired consistency
  • *drink immediately. If left to sit too long the coconut oil may re-solidify

Cinnamon Bun

  • 1/2 ripe banana, you can freeze it first for more texture
  • 1/2 cup Silk Protein + Fiber almond milk
  • 1/2 cup cold water
  • 1/4 tsp vanilla extract
  • 1/2 tsp ground cinnamon, plus more to taste
  • 1/4 cup quick oats
  • 3 oz plain or vanilla Greek yogurt
  • 4 ice cubes

Instructions

  1. Add all of your ingredients to a blender and blend until smooth

Notes

If you prefer a more chocolaty flavor then you may want to add more chocolate syrup than I did.
