Foodie Friday: Stuffed Peppers with Sausage and Shrimp

1 tbsp oil
½ lb Italian sausage (we use turkey or chicken sausage)
½ red bell pepper
½ green bell pepper
1 jalapeño, diced
1 red onion, diced
2 tbsp garlic, minced
1 c rice (we use jasmine)
1 c chicken stock
½ c white wine
½ c water
4-6 green bell peppers, depending on their size
1 lb shrimp, cut into half inch pieces
1 c shredded cheddar cheese
½ c shredded Monterey Jack cheese
In a medium saucepan, heat oil and sausage, cook until no longer pink. Add peppers, jalapeño, onions and garlic. Cook until translucent
Add rice and cook until all the grains of rice are coated with oil. Add all liquids and stir over high heat for 3 minutes, cover, and reduce heat to low. Check rice for doneness after 20 minutes.
Preheat oven to 400° F
Slice peppers in half and hollow them out, place them on a baking sheet and bake for about 15 minutes or until they start to soften. Remove from oven and let cool.
When rice is finished cooking, fluff with fork and stir in shrimp.
Stuff peppers with rice mixture and place on baking sheet, bake for 10 minutes. Remove from oven, mix cheeses together and cover each pepper with cheese. Cook for about 3 minutes or until cheese is melted.

These sound sooo good! I love the “normal” stuffed peppers with ground beef and rice, but these sound so much better! Thank you for sharing!
