The Big Game is almost like a holiday in our house. We often put out a spread that would rival any holiday meal but sometimes we just don’t have the time or desire to go all out so I sometimes “cheat” a little. There isn’t any shame in getting a little help from the store. You can make just about anything your own with a little imagination. 

For our football game day meal we did just that. I took a ride to Walmart for some things to make a meal with that would make my family happy and fit in with my busy Sunday. For our game time meal I picked up a Stouffer’s Party Lasagna, ham and cheese Hot Pockets, pepperoni pizza Hot Pockets, a DiGiorno Supreme pizza, Dreyer’s Touchdown Sundae Ice Cream, and Nestle Crunch dipped Drumstick cones.

For starters I cooked the hot pockets in the oven per the package directions so they would be crispy. I sliced them in half and served them with a homemade cheese dipping sauce.

The cheese sauce was very simple – about 1/4 cup of cream cheese, a 1/4 cup of cheddar cheese, and sour cream to taste and to thin it out to a sauce consistency. I think I ended up using two tablespoons but I would add it gradually. Once everything was melted I added some ground pepper and a small pinch of cayenne pepper. 

We also served this with some sliced orange peppers, clementines, and guacamole with blue corn chips to match our team colors.

After munching on those, which the kids loved, we served the DiGiorno Supreme pizza and lasagna. I have mentioned before that one thing we miss about Connecticut is the pizza. We have been eating more take and bake and frozen pizzas since moving here. We have come to love DiGiorno pizzas.

Jazzing up the lasagna was pretty easy. I turned it into an eggplant parmesan lasagna.

  • Dip some slices of eggplant in an egg wash
  • Coat with Italian seasoned breadcrumbs with some extra pepper, garlic powder, and Italian seasoning.
  • Fry the eggplant in a pan coated in olive oil until they were browned, add them to the top of the still frozen lasagna
  • Top with some extra mozzerella cheese and cooked per the package directions.

It was a simple yet delicious change.

The best part of any meal is always dessert. Am I right or am I right? Instead of plain old ice cream I decided to do something a little more fun and different. 

I made up a batch of Mexican brownies (so good, you need to make them!) and served them with a scoop of Dreyer’s Touchdown Sundae ice cream on top.

I also made some Drumstick Cone milkshakes for anyone who didn’t want a spicy brownie. This was so simple. 

  • Cut the ice cream top off the cone then cut the cone in half to scoop the rest of the ice cream out.
  • Put the ice cream along with the Nestle Crunch topping in a large cup (or blender) with about 1/4 cup of milk
  • Use a stick blender to blend the milk and ice cream together. Slowly add more milk to get the desired consistency.
  • Cut the cone into small pieces with a sharp knife, add whipped cream to the milkshake and garnish the top with the pieces of cone.

This was a huge hit, especially with my fourteen-year-old!

So when it comes to making a spread for the Big Game, take some of the stress out of it and enjoy the game without spending your entire day in the kitchen.

What a great recipe idea to put eggplant on the lasagna! I love eggplant parmesan but dont make it often because it takes so long. This is a great substitute! And I Am sure that my 11 year old will love that Drumstick Shake on game day! #client
