Summer is here and it’s hot! There are lots of ways to cool off but for me, one of the most enjoyable ways is with ice cream. Whether it’s in a cup, a cone, a milkshake or a float, there is no wrong way to eat ice cream but every once in a while I like to kick things up a notch. That’s when I got the idea to make ice cream cupcakes. These “cupcakes” are so easy and fun so they’re great for a summer party or in our case, just a random Tuesday.

For this recipe you will need the following items and ingredients: a tray, silicone cupcake cups, a round ice cream scoop, pound cake, fruit spread, ice cream, whipped cream, sprinkles, and maraschino cherries. 

To assemble the ice cream cupcakes:

Assembly is easy, but you must be sure to keep the ice cream frozen so the cake doesn’t get soggy. I put my cupcake cups on a tray that fit in my freezer then cut a circle of pound cake put it in the bottom of all of the silicone cupcake cups, then I added a dollop of fruit spread, a round scoop of Blue Bunny ice cream, then top with whipped cream, sprinkles, and a cherry. I made two different kinds of cupcakes; vanilla with mango fruit spread and cherry vanilla with strawberry rhubarb fruit spread.

After I had my cupcakes assembled I left them in the freezer for a few hours to harden before serving. The cake will also be frozen so if you’d like you can let them sit for a few minutes to soften a little or eat them as is. The cake remains soft enough to get a fork or spoon through even when frozen.

On a trip to Walmart we happened upon a Blue Bunny ice cream demo and let me tell you, this made the kids’ day! You can find your own Blue Bunny demo with Chip Ahoy at your local Walmart store. We love Blue Bunny ice cream and after our delicious sample we picked some up in the freezer section to use for the cupcakes.

My kids, especially my four-year-old were so excited by this idea that I will definitely be doing it again. I hope you decide to make them and have as much fun with them as we did.

  2. Wow! What a unique recipe. I’ve never heard of ice cream cupcakes before, but they sure do look and sound delicious. I think my favorite thing is how easy they are to make! My favorite way to eat ice cream is either in a milkshake or in an ice cream cake. Maybe a cupcake will be my new favorite!

  6. I used to love eating ice cream out of a cone–but now that I am much older–I seem to gravitate towards a cup. I have had this brand ice cream and it is really good! I love the idea of ice cream cupcakes.
