Life is busy, especially when you have kids. My two sons are in high school and preschool, my husband works a few towns away and sometimes has a difficult commute, and I work from home and tend to keep odd office hours. We are all on very different schedules, but eating dinner together is something that is very important to us. That means that some nights I need to come up with something fast and easy so we are able to eat a meal as a family. 

That’s when I came up with these fast and easy Buffalo Chicken Pita Sandwiches. They were done in less than half an hour and were a hit with the whole family.

The ingredients are simple: Farm Rich boneless Buffalo-Style Chicken Bites, pita pockets, bleu cheese dressing, fresh bleu cheese (I used smoked), lettuce, tomato, and cucumbers.

To make the sandwiches, cook the Buffalo-Style Chicken Bites according to package directions, either in the oven or in the microwave. When the chicken is done, cut the bites into quarters and cover with the included Buffalo style sauce. Fill the pita with lettuce, a few drizzles of bleu cheese dressing, tomato, cucumber, and Chicken Bites. Top with more bleu cheese dressing and crumbled fresh bleu cheese if desired.

We like to mix things up in our house and not rely on stopping for take-out because it gets expensive. Having a few easy dinner solutions in the freezer that we can dress up and make our own meal out of is a must on those busy evenings when someone is getting home late or when we forget to take something out of the freezer to thaw. When I am able to get dinner on the table in a half hour or less, that leaves us with more time to do the things that really matter like catching up on our day, watching a movie together, or having a family game night. This recipe allows me to do just that and is tasty, too!

Fast and Easy Buffalo Chicken Pita Sandwiches

Ingredients

  • Farm Rich Buffalo Style chicken bites
  • whole grain pita pockets
  • bleu cheese dressing
  • fresh bleu cheese, if desired
  • lettuce
  • tomato
  • cucumber

Instructions

  1. Cut your vegetables into bite sized pieces
  2. Cook the Farm Rich Buffalo Style chicken bites according to package directions
  3. Cut cooked Buffalo Style chicken bites into quarters and coat with included sauce
  4. Fill the pita pocket with lettuce, bleu cheese dressing, tomato, cucumber, chicken, top with more bleu cheese dressing and fresh bleu cheese crumbles if desired.

ingredients does not have ginger in it but in the cooking instructions does ,,,want to make and i will add fresh ginger .

In the first photo, there is a box of mozzarella sticks. What are this used for? Just a side or something?

Yes. In my initial pictures the mozzarella sticks were featured but I wasn’t happy with the lighting and retook them the next day, but the mozzarella sticks were gone.
