Thanksgiving Pumpkin Pie Rice Krispie Treats

One of the best things about Thanksgiving is all of the delicious food, especially the desserts. Along with the traditional apple and pumpkin, we’re making Thanksgiving pumpkin spice Rice Krispie treats shaped like pumpkin pie! The kids will love to help make this dessert and especially eat it.

These Thanksgiving treats are perfect for any fall party or Thanksgiving feast. Plus, they’re so easy to make that even the kids can help!

Celebrate fall or Thanksgiving with these Pumpkin Pie Rice Krispie Treats! The crust is made with classic rice cereal treats, but the surprise is that the “filling” tastes like pumpkin pie! Top with some whipped cream to complete this adorable recipe.

Ingredients

With just a few inexpensive ingredients and about 25 minutes, you can make this fun dessert that the whole family will love. Make these pumpkin spice Rice Krispie treats a few hours before serving them.

Coat your pie dish with nonstick cooking spray.

For the crust layer, add the marshmallows and butter to a large mixing bowl. Put them in the microwave for 1.5 minutes or until the marshmallows have increased in size.

Pumpkin Spice Flavored Pumpkin Pie Rice Krispie Treats

Stir until the butter has fully melted. 

Add the Rice Krispies to the crust layer and fold together all of the ingredients until the cereal is completely coated.

Pour the mixture into the pie plate.

After spraying a flat-bottomed measuring cup or glass with nonstick cooking spray, use it to press the cereal evenly on the bottom and sides of the pie plate.

In a large mixing bowl, add the marshmallows and butter for the pumpkin layer. Cook in the microwave for 1.5 minutes or until the marshmallows have grown to a large size.

Keep mixing until the butter has completely melted.

Add the pumpkin spice and orange dye; stir thoroughly until the mixture is an even color.

Add the cereal to the mixture and fold everything together until the cereal is coated completely.

Add the pumpkin spice cereal mixture to the top of the crust layer. Use a flat-sided measuring cup or glass to flatten it tightly into the crust layer. Make this layer a little lower than the top of the crust, so it looks like pie filling.

Let the pumpkin pie cereal sit for about 4 hours to set.

Cut the “pie” into equal slices. Add whipped cream to each piece if desired. Serve and enjoy!

Tips & Tricks:

  • If you have extra cereal mixture, use a muffin tin, mini pie plates, or tart pans to make mini pumpkin pie Rice Krispie treats.
  • If the pumpkin spice layer isn’t dark enough and you want to add more orange gel food dye, add it before mixing the cereal in. 
  • Get each layer packed as tight as possible so it’s easier to slice and they stay together in a pie shape.
  • For easier slicing, spray your knife with nonstick cooking spray before cutting. 
  • Spray a little nonstick cooking spray on your hands to help keep your hands from sticking to the rice cereal and marshmallow mixture.

Pumpkin Spice Rice Krispie Treats Variations

1. If you like the look of the pie but not the taste of pumpkin pie spice, omit the seasonings and make plain Rice Krispie treats for the center and add orange food dye.

2. For even more fall flavor, add some maple syrup to the marshmallow mixture to taste. Start by adding a teaspoon and go up from there if you would like a stronger flavor.

3. Add more pumpkin pie flavor by adding a touch of cinnamon or nutmeg, or both, in addition to the pumpkin pie spice.

Instructions
