Chicken Fajita Casserole for an Easy Weeknight Meal

I am always impressed by companies that give back and encourage community involvement. When I learned that Tyson has partnered with Champions for Kids for a program called Summer of Giving I was inspired. Inspired to create a dish using Tyson’s Grilled and Ready chicken for my family and someone else’s as my way of giving back to my community.

Champions for Kids is an organization that strives to give kids what they need and Walmart is making it simple by setting up displays in participating stores where you can donate to help them feed five million kids this summer. You can also help by purchasing specially marked packages of Tyson products. For every packaged purchased another will be donated to a child in need. 

There are plenty of people you can help right in your own community. Maybe you know an elderly couple, a new mom, a friend who is recovering from an accident or illness. The possibilities are endless as there is always someone in need and they may not ask for help. You could even donate a meal to a homeless or women’s shelter or donate food to a local food pantry. Take it upon yourself to make a meal for someone else in the spirit of giving and community. 

I went to Walmart to pick up some Tyson Grilled and Ready chicken and other ingredients to make a simple but delicious meal that is always a favorite in our house. Chicken Fajita Casserole, or as my husband calls it, Mexican Lasagna. Whatever you choose to call it, it’s simple and flavorful.

My husband has a coworker who has had a recurrence of cancer and is undergoing treatment. She would appreciate a meal that she can simply defrost and heat up in the oven. The bonus to making this meal for someone else is that it always tastes better as leftovers. 

Assemble your ingredients:

Chicken Fajita Casserole {Mexican Lasagna} Recipe #SummerofGiving #shop I like to set the bag of frozen peppers out on the counter to thaw beforehand. Before putting them in the pan I drain them in a colander and squeeze the excess water out. Some mixes already have onion in them but if it doesn’t then I first cook up half of an onion until translucent then I add the peppers to the onions and combine. 

Add the frozen chicken to a heated pan and cook until thawed per the package directions, about 5-8 minutes. Cut your tortillas in half and arrange them to cover the bottom of the pan over about a half cup of the bean and tomato sauce mixture and add the other ingredients in layers. {the recipe card is below}

Bake and enjoy! Serve with sour cream and salsa. Delicious!

Chicken Fajita Casserole {Mexican Lasagna}

This is a simple, delicious meal that your whole family is sure to love. It tastes even better as leftovers!


  • 1 16 oz can of refried beans with green chiles
  • 1 15 oz can tomato sauce
  • 1 package fajita seasoning mix, or about 1 oz from a jar
  • 1 pkg Tyson Grilled & Ready Southwestern Chicken Strips
  • 8 6 inch flour tortillas
  • 1 bag, 1 lb frozen stir-fry bell peppers and onions, thawed, drained
  • 1 cup grated Monterey Jack cheese
  • 1 cup grated cheddar cheese


  1. Thaw mixed peppers ahead of time then drain in a colander. Squeeze out excess water.
  2. Heat oven to 375°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray.
  3. Heat the Grilled & Ready Chicken until thawed. Cut larger pieces into bite-sized pieces if desired.
  4. *If your pepper mixture doesn't have onions slice a half of an onion and cook in a skillet until transluscent then add peppers. Mix to combine
  5. In another pan, mix refried beans, tomato sauce and fajita seasoning mix and heat
  6. Spread 1/2 cup of the bean mixture over bottom of baking dish. Cover the bottom of the pan with a single layer of tortillas, overlapping if necessary, in baking dish (TIP: I cut the tortillas in half so that they have flat edges and fit in the pan better.
  7. Top with half of remaining bean mixture, half of the chicken, half of the vegetables and 1 cup of the cheese. Repeat layers with remaining tortillas, bean mixture, stir-fry vegetables and cheese.
  8. Cover baking dish with foil. Bake 30 minutes. Uncover; bake 15 to 20 minutes longer or until hot and bubbly. Let stand 5 minutes before cutting.


Serve with sour cream and salsa
